A native of New Orleans East, Papa Roux is a graduate of Marion Abramson Senior High School and the brother of Middendorf’s Seafood Restaurant, Akers, LA, pastry chef Michael Bouvier and New Orleans dietician Ginger Bouvier.

Papa Roux focuses on New Orleans-style po-boy sandwiches in Indianapolis, using authentic products whenever possible. Papa Roux, who attended Brother Martin with Vance Vaucresson, gets his sausage from Vaucresson Sausage of New Orleans. Papa Roux also always uses fresh Gulf Seafood shipped weekly to use the freshest of ingredients in making his dream of bringing authentic New Orleans to Indy a reality.

On Friday August 20, Papa Roux is excited to welcome Paul Sanchez and Shamarr Allen. Sanchez and Allen are stars of the BP protest song, “Sorry Ain’t Enough No Mo,” along with Dee-1 and Bennie, fellow members of New Orleans’ own Hot 8 Brass Band.
