Just as Louisiana's colorful history shaped our culture, it also has defined our food. To partake of Louisiana's cuisine is taste a bit of every influence that has touched this land during many centuries. Today you can sample it in a French bouillabaisse, perhaps seasoned with cayenne pepper from the Cajuns. Try our okra, from African-Americans; sausages from the Germans; rice from the Senegalese; and maybe a dash of the Native Americans' filé powder. Stir it all up in a Creole black cast iron pot and you've got gumbo, one of Louisiana's most famous dishes. But there's so much more!
